Recent years have seen a huge transformation in the wedding industry as more and more loved-up couples ditch traditional ceremonies in all their formal glory in favour of more laid-back and quirky affairs which better suit their personalities. Preparing to cater for a rustic themed wedding over the weekend, the Hog Roast Killyleagh team headed over to the Georgian era bed and breakfast, Dufferin Coaching Inn which provides a perfect backdrop for couples who are looking for the ultimate fairytale experience. At the head of the event was our extremely talented catering manager, Nathan and chef, Ben who worked their aprons off to prepare an otherworldly feast from our southern slow roast menu for the all-important day.
Entering the unique dining hall, which boasted traditional features and a stunning glass ceiling that allowed a halo of natural light to wash over the room, the catering duo immediately made a start on the afternoon spread. Using the meats which had been pre-marinated in our secret recipe rubs, the pair whipped up our famous flavour-packed BBQ pork butt, cajun spice whole roast chickens and Texan 24 hour beef brisket, along with grilled veggie skewers as an alternative for vegetarian and vegan guests.
In addition to the main meal, the team also prepared gorgeous platters of Memphis style crunchy coleslaw, Greek salad, potato wedges and fluffy baked potatoes. As the serving time neared, Hog Roast Killyleagh also laid out a wicker basket which overflowed with freshly baked poppy seed rolls and wraps and lined up the condiments alongside the wooden crockery.
The 100-strong wedding party soon arrived to kick start the celebrations, and upon entering the hall their jaws dropped. After marvelling at the hanging baskets of luscious green foliage which clung to the beams, and the cluster of solid wood tables which had been generously decorated with a log centerpiece, book pages, wildflowers and candles, the guests excitedly tucked into their first of many platefuls from the mouth-watering buffet.
